Japanese cuisine, or ‘washoku’, is registered as an “intangible cultural heritage” by UNESCO and recognised for four notable characteristics: a deep respect for fresh ingredients and their natural flavours, a nutritional balance that supports a healthy diet, an emphasis on the beauty of nature and the seasons, and a close connection to traditional annual events. It is essentially a crystallisation of the deliciously interesting ways in which Japanese culture has diversified itself through the seamless intermingling of external influences, particularly from China and the West. Filled with mouth-watering illustrations and descriptions, this essential guide shares Japanese cuisine with the world.
